Created by a Local Government Act in 1974, North Yorkshire is the largest county in England, covering 3,341 square miles and most of the historic Ridings. Snug grey villages are home to some of the friendliest people in Britain, who take pride in enormous high teas; a meal combining the best of afternoon tea and supper and usually featuring large quantities of fresh cream. Wensleydale cheese comes from this region.

This is a wonderful area for walking in summer but not in winter, when temperatures regularly drop below freezing and deep snow is common. There are extensive cave systems through the limestone, and caving is a popular activity. Gaping Gill on the southern slopes of Ingleborough is a 105-metre-deep pothole into which flows the stream Fell Beck. Extreme rock-climbing up the shaft is possible there. Other popular caves include Leck Fell Caves and Easegill system. In Howgill Fells, Cautley Spout is the highest waterfall in England, a broken cascade tumbling 198 metres down a cliff face.

At the mouth of the River Esk, Whitby is a popular seaside resort. Whole pterodactyl skeletons have been found there; while you can’t take these home, it is possible to buy the lovely green ammonite fossils for which the area is famous. The ruins of the Abbey on the East Cliff are a must-see. The Banqueting House next door is a lovely ancient building which holds a fascinating museum about the town’s history. On the West Cliff, a whalebone arch commemorates the whaling industry. The Dracula Museum is a popular novelty. Don’t miss the Magpie Café, which Rick Stein considers the best fish and chip shop in Britain.

In the Regency period, Harrogate was the northern equivalent of Bath, a fashionable spa town. The Pump Rooms were still dispensing 26,000 glasses of the sulphurous water in 1926; you can still drink it at the Pump Rooms Museum. The Stray is a huge park overlooked by pretty Georgian houses. Other popular monuments include Bolton Castle, a quadrangular castle with enormously high walls, built in 1379; and Richmond Castle, one of the finest surviving Norman buildings, which was used as the base of the Non-Combatant Corps – conscientious objectors who refused to fight – in the First World War. Finally, Studley Royal Park is a park developed around the ruins of the Fountains Abbey. The Abbey was founded in 1132 by Benedictine monks; after the dissolution of the monasteries under Henry VIII, it passed to the Proctor family, who built Fountains Hall, a remarkable Elizabethan mansion, from the stones of the Abbey. The Fountains Abbey Mill is the only surviving 12th century Cistercian water mill in Britain. The water garden’s elegant ornamental lakes, canals, temples and cascades provide a succession of dramatic eye-catching vistas that fit their setting perfectly.
